A rare coffee, grown by one family, roasted just for you.

Castillo is the cup you'll reach for every morning — smooth, comforting and endlessly easy to love. Washed and sun-dried, then roasted to order, it delivers rich milk chocolate and caramel with a gentle red-apple brightness, a rounded body and a sweet, balanced finish. Just as clean and traceable as the rest of the harvest.

84-point specialty grade · 100% Arabica · Single origin · Roasted to order

Origin & Farm

Grown at 1,650–1,800 meters above sea level on Hacienda Cafetera El Porvenir, the farm María del Pilar Espinal inherited from her father in Galicia, Valle del Cauca, Colombia. Shade-grown under native trees and fed with compost and biofertilizers made on the farm. No pesticides. No chemical fertilizers. Just clean land, clean water, and three generations of know-how.

Process

Hand-picked only at peak ripeness, then carefully washed and sun-dried on the farm. We don't roast until you order, so your bag ships at its freshest, never after months on a shelf.

From Her Farm to Your Cup

After more than a decade displaced by violence, María del Pilar Espinal and her neighbors came home to their land and rebuilt it, one coffee tree at a time. Today she leads ASOMORENA, an association of 84 small coffee-farming families in Galicia, Colombia, growing specialty coffee through clean, organic agriculture. Their coffee has traveled as far as Japan, and her work has been showcased at international forums in Japan and Mexico.

Every bag of Dorado Galiciano carries that story.
